Korean kimchi stew is the best!
here's a recipe for Kimchi stew, also known as Kimchi jjigae
Ingredients:
- 2 cups of well-fermented kimchi, chopped
- 1/2 pound of pork belly or shoulder, sliced
- 1/2 onion, sliced
- 1/2 block of firm tofu, sliced
- 2 garlic cloves, minced
- 2 green onions, chopped
- 1 tbsp of gochugaru (Korean red pepper flakes)
- 1 tbsp of gochujang (Korean red pepper paste)
- 1 tbsp of soy sauce
- 1 tsp of sugar
- 2 cups of water
- Salt and pepper to taste
- Sesame oil (optional)
Instructions:
- Heat a pot or a Dutch oven over medium-high heat.
- Add the sliced pork belly or shoulder and stir-fry until slightly browned.
- Add the sliced onion and minced garlic, and stir-fry for a couple of minutes until fragrant.
- Add the chopped kimchi, gochugaru, and gochujang, and stir-fry for a couple of minutes until well combined.
- Add 2 cups of water and bring to a boil.
- Reduce the heat to medium-low and simmer for 20 minutes.
- Add the sliced tofu, chopped green onions, soy sauce, and sugar, and stir gently to combine.
- Simmer for another 10 minutes or until the tofu is cooked through.
- Taste and adjust the seasoning with salt and pepper if necessary.
- Serve hot with steamed rice and a drizzle of sesame oil if desired.
