Korean kimchi stew is the best!

here's a recipe for Kimchi stew, also known as Kimchi jjigae

Ingredients:

  • 2 cups of well-fermented kimchi, chopped
  • 1/2 pound of pork belly or shoulder, sliced
  • 1/2 onion, sliced
  • 1/2 block of firm tofu, sliced
  • 2 garlic cloves, minced
  • 2 green onions, chopped
  • 1 tbsp of gochugaru (Korean red pepper flakes)
  • 1 tbsp of gochujang (Korean red pepper paste)
  • 1 tbsp of soy sauce
  • 1 tsp of sugar
  • 2 cups of water
  • Salt and pepper to taste
  • Sesame oil (optional)

Instructions:

  1. Heat a pot or a Dutch oven over medium-high heat.
  2. Add the sliced pork belly or shoulder and stir-fry until slightly browned.
  3. Add the sliced onion and minced garlic, and stir-fry for a couple of minutes until fragrant.
  4. Add the chopped kimchi, gochugaru, and gochujang, and stir-fry for a couple of minutes until well combined.
  5. Add 2 cups of water and bring to a boil.
  6. Reduce the heat to medium-low and simmer for 20 minutes.
  7. Add the sliced tofu, chopped green onions, soy sauce, and sugar, and stir gently to combine.
  8. Simmer for another 10 minutes or until the tofu is cooked through.
  9. Taste and adjust the seasoning with salt and pepper if necessary.
  10. Serve hot with steamed rice and a drizzle of sesame oil if desired.
